Charlie's Procedure


How to make Feijoa Fizz

You will need

.approx one litre of feijoa skins (washed)
.one litre of filtered water (or cooled boiled)
.four tablespoons of white sugar 
.Litre glass jar (sterilised)

Method

1.  Loosely fil the litre jar with the feijoa skins. Add half of the sugar, then fill the jar with the filtered water.

2.  Place another (sterilised) glass in the mouth of the big jar with the feijoa skins inside to keep the skins below the surface of the water, (if they come above the water they will go rotten and send the whole batch bad)

3.  Cover with a napkin or a tea towel and secure with a rubber band or a piece of string then leave on the kitchen bench for two-three days.

4.  Strain the liquid into another bottle or jar and add the remaining sugar stir seal tightly with a lid and leave in the fridge until cold. Drink cold.
